Job Description
We’re Attitude, and we’re coming soon. In 2025, we’re opening our very first hotel outside Mauritius, right here in Matemwe: an adults-only hotel with 74 villas, two restaurants and two bars. It’s a new chapter for us, and we’re putting a lot of heart into making it something special.

MAIN DUTIES & RESPONSIBILITIES
Operational/Technical Responsibilities:
- Cut, trim, debone, and prepare meat, poultry, and fish for sale or further processing.
- Inspect and grade meat, fish, and poultry for quality, freshness, and safety.
- Maintain cleanliness and hygiene of work areas, tools, and equipment to comply with food safety standards.
- Receive, store, and rotate stock, ensuring proper inventory management and reducing waste.
- Follow food safety and sanitation regulations, including HACCP and other health standards.
- Sharpen and maintain knives and other cutting tools to ensure efficiency and safety.
- Prepare special cuts or orders based on customer specifications.
- Work with suppliers to order inventory and manage deliveries.
Specific to Meat:
- Break down carcasses into standard cuts.
- Prepare sausages, ground meats, and value-added meat products.
Specific to Fish:
- Clean, gut, and fillet different types of fish.
- Remove bones and skin as required.
- Check for freshness indicators such as smell, texture, and appearance.
Specific to Poultry:
- Debone and portion chicken, duck, or other birds.
- Trim fat and prepare poultry for roasting or other preparation methods.
YOUR QUALITIES:
- High School Diploma or equivalent
- Vocational training or apprenticeship in meat cutting, fish mongering, or poultry processing would be an advantage.
- 3-5 years experience as butcher
- Ability to embody and instil Attitude’s DNA and culture within the hotel.
- Proficiency in using knives, saws, grinders, and other butchering tools.
- Knowledge of meat cuts, fish species, and poultry types.
- Understanding of food safety regulations
- Ability to operate meat processing equipment safely.
- Attention to detail – ensuring proper cuts and hygiene.
- Excellent communication skills: Clear, professional verbal and written skills and fluency in English and Swahili.
- An understanding of the African Market will be a definite advantage.
- Ability to compete in a fast-paced, dynamic and guest centric environment
