Job Description

Hello Zanzibar

We’re Attitude, and we’re coming soon. In 2025, we’re opening our very first hotel outside Mauritius, right here in Matemwe: an adults-only hotel with 74 villas, two restaurants and two bars. It’s a new chapter for us, and we’re putting a lot of heart into making it something special.

MAIN DUTIES & RESPONSIBILITIES

Strategic Goals for the Pastry/Bakery Chef:

  • Company Culture & Employee Engagement: Maintain and reinforce company culture in daily operations, creating a positive, engaging experience for both employees and customers. Ensure legal compliance.​​
  • Transparent Communication: Foster open, transparent communication with all Family Members to build trust, improve engagement, and enhance teamwork.​​
  • Leadership & People Management: Promote a culture of proximity with employees, create and maintain a great place to work culture, ensuring employees are physically, emotionally and psychologically safe in their work environment. ​​
  • Cross-Departmental Collaboration: Foster a culture of transversality by promoting cross-departmental collaboration and communication to achieve common goals.​​

Operational/Technical Responsibilities:​​

1.Preparation and Baking

  • Prepare doughs, batters, and fillings for pastries, breads, and desserts.​
  • Bake and finish cakes, breads, croissants, tarts, cookies, and other baked goods.​
  • Monitor baking processes and adjust oven temperatures/times accordingly.​

2. Recipe Development

  • Create new and innovative pastry and dessert recipes.​
  • Adapt existing recipes to meet dietary requirements (e.g., gluten-free, vegan).​

3. Presentation and Decoration

  • Decorate cakes and desserts using icings, glazes, chocolate work, and sugar art.​
  • Ensure consistent portioning and presentation in line with brand or restaurant standards.​

4.Inventory and Ordering

  • Manage inventory of ingredients and baking supplies.​
  • Order and restock items as necessary, ensuring freshness and quality​

5. Sanitation and Food Safety​

  • Maintain a clean and organized work environment.​
  • Adhere to food safety and hygiene regulations (HACCP, local food laws).​

6.Team Management and Training

  • Supervise and train junior bakers and pastry assistants.​
  • Assign tasks and ensure kitchen workflow is efficient.

YOUR QUALITIES: ​​

  • Certificate or Diploma in Baking and Pastry Arts​
  • 5 + years of progressive experience in pastry/baking environment​
  • Proficiency in baking techniques (proofing, mixing, tempering, laminating, etc.)​
  • Ability to design and decorate pastries and desserts beautifully.​
  • Ability to embody and instil Attitude’s DNA and culture within the hotel.​
  • Ability to work under tight deadlines, especially during service hours or events.​
  • Capability to work long hours, often standing for extended periods.​
  • Ability to troubleshoot baking issues and find quick solutions.​
  • Strong interpersonal and communication skills, with an enthusiastic and outgoing personality.​
  • Excellent communication skills: Clear, professional verbal and written skills and fluency in English and Swahili. A third language would be a definite advantage.​
  • An understanding of the African Market will be a definite advantage.​
  • Ability to compete in a fast-paced, dynamic and guest centric environment​
