Job Description

Hello Zanzibar

We’re Attitude, and we’re coming soon. In 2025, we’re opening our very first hotel outside Mauritius, right here in Matemwe: an adults-only hotel with 74 villas, two restaurants and two bars. It’s a new chapter for us, and we’re putting a lot of heart into making it something special.

We’re now looking for people to join the adventure. Plenty of roles, plenty of opportunities.

MAIN DUTIES & RESPONSIBILITIES

Operational/Technical Responsibilities:​​

  • Support the executive or head chef in kitchen operations and management.​
  • Manage and schedule kitchen brigade (chefs, cooks, kitchen assistants).​
  • Ensure efficient workflow and productivity.​
  • Oversee the preparation and presentation of meals.​
  • Ensure consistency and quality control of dishes.​
  • Monitor inventory levels and place orders for supplies.​
  • Ensure proper storage and minimal food wastage.​
  • Maintain hygiene standards and enforce food safety regulations.​
  • Ensure compliance with local health codes.​
  • Collaborate on creating and updating menus.​
  • Experiment with new dishes and ensure cost-effective recipes.​
  • Train new kitchen staff​
  • Provide ongoing mentoring and upskilling of junior team members.​
  • Conduct quality checks on ingredients and final dishes.​
  • Ensure customer satisfaction through consistent standards.​
  • Address any issues related to kitchen operations or staff performance.​
  • Assist with cost control and budgeting for food and labour

YOUR QUALITIES: ​​

  • Certificate or Diploma in Culinary Arts/Hospitality Management ​
  • 3-5 years of kitchen experience, with a progression through kitchen ranks (e.g., Commis Chef → Chef de Partie → Sous Chef).​
  • Ability to embody and instil Attitude’s DNA and culture within the hotel.​
  • Strong interpersonal and communication skills, with an enthusiastic and outgoing personality.​
  • Excellent communication skills: Clear, professional verbal and written skills and fluency in English and Swahili. A third language would be a definite advantage.​
  • An understanding of the African Market will be a definite advantage.​
  • Ability to compete in a fast-paced, dynamic and guest centric environment​​​
  • Outstanding customer service skills in handling customer queries and resolving issues.
